The kids are sure to love this classic sandwich made into a yummy ice cream treat!
- Edy's® All About PB™ No Sugar Added Ice Cream
- 2 sticks butter, softened to room temperature
- 1 cup sugar
- 4 eggs
- 2 tsp. vanilla
- 1/4 cup milk
- 2 1/2 cups cake flour
- 1 tsp. baking powder
- 1/4 tsp. salt
- Raspberry or other fruit-flavored jam
Preheat oven to 350° F.
Grease and flour a loaf pan.
Cream together butter and sugar. Add the eggs, one at a time, beating well after each addition. Add vanilla and milk. Sift together flour, baking powder and salt. Add to batter and mix until just blended. Pour batter into prepared pan and bake 30-60 minutes. A skewer inserted into the center should come out clean. Cool in pan 20 minutes, then remove and cool completely.
Line a loaf pan with plastic wrap. Soften ice cream and spread into the loaf pan mounding in the middle so that it's the same shape and size as the pound cake. Freeze until solid. Slice pound cake into "bread" slices 1/2 to 3/4 inch thick. Unmold ice cream and for each "sandwich," slice ice cream 1 inch thick. Place slice of ice cream on a slice of pound cake. Spread jam on a second slice of pound cake and place on top of ice cream, jam side down, to complete the sandwich. Repeat for each sandwich.
Wrap each sandwich in plastic wrap and freeze until solid, about 1 hour. When solid, cut sandwiches diagonally into triangles. Hold in place with toothpicks and serve.
