Description

Cool down on a hot day with this tasty Pacific Cooler recipe! Using mango sorbet, coconut milk and a few other simple ingredients, it sure is refreshing.

Ingredients

  • Edy's® Whole Fruit Mango Sorbet
  • 1/2 cup coconut milk or Coco Lopez
  • 2 tsp. rum extract (optional)
  • Paper umbrellas (optional)
  • 1 cup canned or ripe fresh pineapple chunks

Preparation

Combine about 2 cups of sorbet, coconut milk and rum in a blender and blend on medium speed until smooth. Serve immediately in tall glasses garnished with paper umbrellas and pineapple chunks. Serves 2.
