Rice & Sausage Casserole


  • 1 lb. Bob Evans® Zesty Hot Roll Sausage or Original Recipe Sausage Roll
  • 1 box (5.8-oz.) vegetable flavor rice mix
  • 2 Tbsp.  butter or margarine
  • 1 cup chopped celery
  • 1 pkg. (16-oz.) frozen green, red and yellow peppers and onions
  • 1 can (10.5-oz.) condensed cream of mushroom soup
  • 1 cup milk
  • Salt & pepper to taste
  • 1/2 cup (2-oz.) shredded Colby cheese


Cook rice according to package directions. Transfer to large bowl. Preheat oven to 350F. In medium skillet over medium heat, crumble and cook Bob Evans® Zesty Hot Roll Sausage until brown. Stir sausage, vegetables, soup, milk, salt and pepper into cooked rice; mix well. Spoon mixture into lightly greased 2-quart baking dish. Sprinkle with cheese. Bake uncovered, 40 minutes or until heated through. Serve hot.

Refrigerate leftovers.
