Banana Bread


  • 2 1/2 cup flour
  • 3/4 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. cornstarch
  • 1/2 tsp. salt
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/4 cup apple sauce, unsweetened
  • 2 eggs
  • 3 bananas
  • 1/3 cup 8th Continent Vanilla Soymilk
  • 1 tsp. vanilla extract
  • 1/2 tsp. cardamom (optional)
  • nonstick cooking spray


Preheat oven to 375 degrees Fahrenheit. Place sugars and applesauce into a large bowl and beat with a mixer at medium speed until well, combined. Add eggs and beat well. Add bananas and beat well. Add soymilk and vanilla extract and blend well. Combine flour, salt, baking power, baking soda, cornstarch and cardamom. Add slowly to banana mixture beating at low speed until just combined. Spray a 8 1/2 inch X 4 1/2 inch loaf pan and pour in batter. Bake 1 hour and 10 minutes or until a toothpick inserted in the middle of the loaf comes out clean. Cool completely and enjoy.
